Hydroxytyrosol (HXT) is a phenolic compound extracted from the olive and olive leaves. Hydroxytyrosol is generated by the conversion of oleuropein, another important substance present in olives. The conversion occurs during olive ripening or when the olive tissue is damaged by pathogens, herbivores, or mechanical damage, where it acts as an antimicrobial to protect the plant (1).

The highest concentration of HXT is found in olive leaves. However, it is lost during oil manufacturing.

HXT has been extensively investigated during the last twenty years due to its outstanding potential for human health support. Relevant areas investigated in the scientific literature are related to the impact of HXT on e.g. the cell wall of Candida albicans (2).

In oncology field, the impact of HTX on mechanisms such as thioredoxin system, cancer stem cells, pithelial-to-mesenchymal transition, Wnt/β-catenin and TGFβ signaling pathways (3), as well as on myeloid-derived suppressor cells (MDSCs) (4) has been studied intensively.
