Sulforaphane is the compound in broccoli responsible for many of its health benefits. Only a few products available around the world contain the true, free and stabilized sulforaphane that is typically studied by scientists. Nearly all other food supplements contain sulforaphane’s precursor, known as sulforaphane glucosinolate, or glucopharin.

For sulforaphane glucosinolate to be absorbed, the human body needs to first convert it into free sulforaphane. For this conversion to take place, a specific enzyme called myrosinase, is required. In nature, both sulforaphane glucosinolate and myrosinase exist inside the broccoli plant. However, food processing, including boiling, degrades most of the myrosinase enzyme found in broccoli and, as a result, very little sulforaphane will finally reach the blood stream.

Clinical trials (1) tell us that, without the enzyme myrosinase, only 10% of sulforaphane glucosinolate is converted into free sulforaphane and absorbed by the body. The rest is excreted. This small conversion is facilitated by gut bacteria, and therefore varies from person to person.

When sulforaphane glucosinolate and myrosinase are delivered at the same time, a significantly higher conversion of sulforaphane glucosinolate is achieved. Clinical trials estimate the conversion to be approximately 40%, again with variations from person to person (1).

It can therefore be deduced that only part of ingested sulforaphane glucosinolate can be converted into the free sulforaphane known for its many health benefits.

Furthermore, It is important to note that sulforaphane glucosinolate has a higher molecular weight than free sulforaphane. Thus, 2.5 mg of sulforaphane glucosinolate will generate only 1 mg of free sulforaphane. This becomes significant when we need to estimate how much sulforaphane glucosinolate within a capsule will become free sulforaphane actually available to the body.

When making this estimate, we need to consider two aspects:

1. How much sulforaphane glucosinolate is converted into sulforaphane (40% with myrosinase and 10% without myrosinase enzyme).
2. How much of this converted sulforaphane glucosinolate will end up as free sulforaphane from a weight aspect (2.5 mg sulforaphane glucosinolate becomes 1 mg free sulforaphane).

Thus, if a capsule contains 100 mg sulforaphane glucosinolate and there is no myrosinase, according to the results of the aforementioned clinical trials, 90 mg will be excreted without having the chance to get to the blood stream. Only 10 mg will be converted into free sulforaphane. Furthermore, due to the difference in molecular weight,10 mg sulforaphane glucosinolate will become only 4 mg free sulforaphane.

In other words, 25 mg sulforaphane glucosinolate generates 1 mg free sulforaphane.
